My Cocky Leeky

Here's a great recipe for Potato Leek Soup (optional w/ chicken) that I found on All Recipes many years ago. I just dug it out and made a pot this afternoon.

Ingredients
• 1 cup butter (2 sticks)
• 3 leeks, sliced 1/2" thick (white part only)
• 1 quart chicken broth
• 1 tablespoon corn starch (or substitute flour)
• 5 medium Yukon Gold potatoes, cubed (or substitute white potatoes)
• 2 cups heavy cream (or substitute half-and-half)
• 2 cups cooked chicken, diced (optional)

Directions
In a large pot over medium heat, melt butter. Add leeks and cook until tender, stirring frequently, and separating rings. Season with salt and pepper. About 15 minutes.

Stir corn starch into broth and add to pot. Season with salt and pepper. Add potatoes and bring to a boil.

Stir in heavy cream and reduce heat. Simmer until potatoes are tender.

Optional: add chicken
That's it. It's a great way to use up some left over roasted chicken!

where do I know "cockly leeky" soup from? It's driving me nuts. I can see the old man complaining about his cocky leeky soupin an english accent but that's it.

Sean--I don't know of a pop culture reference. When you say English accent with double entendre, I think of Are You Being Served?

I got hooked on it at a little bistro on Pacific Coast Highway in Laguna Beach, CA called Heidelberg Cafe. We would stop there for lunch after yoga class and I'd always have a bowl. Yum!

OK, a CUP of butter and two cups of heavy cream? Do you eat it or just hook it directly up to an IV?

It finally came to me - The Witches with Anjelica Huston. She plays the head witch who wants to change all little children in England to mice by feeding them poisoned chocolate. A very enjoyable movie.

JK--I know, I know. Everytime I make it, I think, this just can't be very good for you.

Next time I'm going to modify it a bit to see if I can take some of the "bad" out of it without much compromise. I think I can get by with one stick of butter and a cup of half and half. It will need more liquid so I'll add another can of chicken stock to make up the difference and see how that turns out.

But, as is, it sure is delicious!
